Earlier this week, we visited Sunrise Bistro & Bar at Big Splash at East Coast to taste the revamped a la carte menu and their upcoming Festive Communal Set. We were really excited to experience how the chef marries casual French cuisine with contemporary influences using his signature sous vide technique.
Ambience
Tucked away in a nostalgic location, the casual dining setting offers comfort at the end of our busy day. The spacious and cosy al fresco dining area spoils you with the gentle sea breeze, inviting you to kick back, relax and put your mind totally at ease. Here’s how the bar looks like indoor:
In addition to the extensive wine and beer list, Sunrise Bistro & Bar also offers a good mix of small bites and sweet treats. The friendly bartenders are also more than happy to whip up any customized drink at your request, something we find more bars are starting to offer in Singapore.
Festive Communal Dining Set ($99++) – Serves 2 to 3 persons
Just in time for the festive season, the chef doled out a Festive Meal featuring Chilled Assorted Seafood Platter, Meat Platter and Salted Egg Yolk & White Chocolate Fondue. This is available from 19th December to 1st January 2016.
Here are some of the food we tried:
Chilled Assorted Seafood Platter
These freshly shucked Australian Coffin Bay Oysters are juicy, plump and succulent. It is apparent that premium oysters are carefully chosen to satisfy diners’ taste buds.
The chef definitely pays a lot of attention to the condiments in order to heighten the indulgence of seafood. The unique condiments – Japanese Migonette with Japanese Brown Rice Vinegar paired nicely with the oysters, while the Thai Style Roasted Tomato Dip brought out the sweet tenderness of the White Wine Blanched Live Prawns.
Meat Platter
Fret not if the cold platter doesn’t suit your fancy, there’s also the meat platter which you can choose from. The meat platter champions a Whole Red Snapper with Cereal Crust, BBQ Black Angus Beef Ribs and Crispy Pork Belly with Five Spice Salt. The red snapper was coated with Asian-style crunchy cereal crust, resulting in a delightful contrast to the soft and velvety smoothness of the red snapper. Similarly, the chef had specially prepared homemade sauces just for the platter – Apple and Smoked Ketchup, Sweet Chilli and Pineapple Sale and Honey Mustard Sauce. Our choice of poison? The Honey Mustard Sauce!
One of the highlights of the platter is the Pumpkin and Potato Mash. This unique combination added a touch of sweetness to the well-loved mashed potato, making it one of a kind. The smooth textured mash is a soft yet welcoming touch to the meaty platter.
Salted Egg Yolk & White Chocolate Fondue
Fondue doesn’t only exist for those with a sweet tooth. For the salted egg lover, this is undeniably your next favourite dish. Plunge the fruits and cookies into the warm white chocolate and salted egg custard dip and serve it right into your mouth. The feeling you get? Pure bliss.
The chef explained that in usual salted egg dishes, a greasy layer of oil forms after a while. In order to eliminate that problem, white chocolate is added to thicken the salted egg yolk custard hence resulting in a good consistency to the fondue.
Asian Five Spice Duck Leg Confit ($28++)
You can’t possibly miss this dish at a French restaurant – the classic duck leg confit. The duck leg is crispy on the outside, yet tender and juicy on the inside. This is the result of the eight hours of hard work using the sous vide technique.
Cointreau Fizz ($28++)
A refreshing orange twist with Cointreau served in a flask, good for four persons.
Chef/Owner
The founder and the person behind every dish – Chef Vincent. With his 22 years of cooking experience, having served a slate of MediaCorp artistes and politicians, he will definitely delight you with his passion and creativity. His marriage of Asian-influenced flavours and casual French fare is wonderful, yet best of all, won’t burn a hole in your pocket.
All in all, we left the bistro and bar feeling satisfied, and would definitely recommend the menu to our friends with a strong 8 out of 10. The dish to try? All of them!
